Medicinal crops must conform to the regulations of the Japanese Pharmacopoeia and their prices are regulated, so they are not traded at high prices. By searching for new agricultural resources, such as horticultural crops and unutilized crops of medicinal origin that were cultivated in the past, and discovering their potential for agricultural use and medicinal use, sustainable and highly profitable agricultural production could be realized, but research on medicinal crops is mainly in the field of pharmaceutical sciences, with very little knowledge in the field of agricultural sciences. In this book, an interdisciplinary research team consisting of experts in historical research, pharmaceutical science, agricultural science, food science, and agricultural economics discusses research issues along the value chain from exploration and production of specialty horticultural crops to consumers through processing* and marketing, including fruit trees* peony* saffron, and other specialty horticultural crops, with the aim of developing integrated utilization technologies for high value-added production of these crops. The team will propose the development of comprehensive utilization technologies to add value to specialty horticultural crops such as fruit trees, peony, saffron, etc., and agribusiness in collaboration with different fields using medicinal crops, and propose the possibility of creating new industries through the use of medicinal crops.
