*Azuki beans have been produced in the Tokachi Plain, which looks up to the Hidaka Mountains, for over 100 years since the pioneering days of the region, Fair trade brown sugar (mascobado sugar) produced in Negros Occidental, Philippines, and fine agar made in the mountains of Gifu. These simple ingredients are selected at a long-established anko (bean paste) shop, which has been in business for almost 100 years, The bean-jam craftsman cooks and kneads the bean-jam while watching over the process. *The red beans are made from precious, specially grown azuki beans from Tokachi, Hokkaido, Japan. Strawberry and chocolate The well-known organic bitter chocolate from Switzerland is kneaded into the Yokan, accented with sweet and sour Madagascar strawberries.
