互の目の頭が尖って連なり、三本ごとに高さが飛び出した乱れが交っている様が、立ち並ぶ杉のように見えることから名づけられました。この包丁には、職人の技術が惜しみなく注ぎ込まれ、1本の包丁に何人もの職人が携わり、その技が結集され出来上がっています。
